The hight radiant heat gives fried taste without the oil. Unit can also be ued as a smoker. It is healthier, tastier b/c seasonings can be rubbed on without being washed off by the oil, and much safer! If you have ever dropped a turkey into HOT bubbling oil you know what I mean!
