The only reason we talk about wattage is because Nvidia is a freaking piece of garbage company for removing proper naming conventions and having everyone guess actual performance. This is a consumer nightmare having to figure out if the 3060/3070 you're getting is actually the good one.
A lot of last year's RTX 2060 were 80W because that was the initial TDP of RTX 2060 and nVidia released the refresh 110W version on early 2020. Are you saying all those RTX 2060 laptops were poor performing? Can you show us some reviews? Lenovo Legion 5, both Intel and AMD Version, are considered some of the best gaming laptops at that price and having a 80W RTX 2060.
Let's not to conclusion based on your assumptions and ignoring the facts.

Sadly, the student discount isn't working for me. It used to work but it seems like they removed it for this model, probably because they know it will sell either way. Unfortunately, it only works for the intel version, at another $50 off this would've been more tempting.

Selling at MSRP is a deal these days, it will sellout in no time even if it is marked up by $100.

Its still hard to order the Asus 3070 at $1800 with similar specs and it sells out within minutes after restock. Apparently people are getting good hash rate out of 3000 series mobile chips so basically it can pay itself off with time.

Actually it's not. Apart from XMG Neo, in all other comparisons, Intel laptops are having higher TGP RTX 3000 cards compared to currently available Intel based RTX 3000 laptops.
And XMG Neo or Eluktronics in USA, never has better luck tuning their AMD processors power delivery during combined load. Their 110W boosted RTX 2060 in RP-15 and 17 were beaten by Legion 5 AMD with its GTX 1660 ti. Check the Hardware Unboxed review about that comparison where they set the power limit for the both cpu to same 45W and then using same TDP GPU.

It's a joke that all this wattage talk has to come into the discussion with every computer purchase these days. I bought the last deal on this with the 3070 (https://slickdeals.net/f/14866450-omen-laptop-15z-en100-gaming-laptop-amd-ryzen-5-5600h-16-gb-ram-geforce-rtx-3060-6-gb-gpu-2x-256-gb-ssd-15-6-diagonal-fhd-144-hz-ips-300-nits-display-1150?src=SiteSearch) but glad I just sold it off.

Someone with the 3070 version of this ran Time Spy and it was only getting about ~9300 if I'm remembering right. There was a reddit thread about it.

Yes, I always look up reviews. The Omen had MaxQ 2070 or 2080, or 80W 1660Ti or 2060. If that is true of the 2021 models, then it's going to be poor compared to laptops with 130W+ GPUs.

My 115W MSI 2060 scores 25% faster than the Omen in Timespy graphics. You'd be better off with the 115W GE75 MSI 2070 for $1200 at Costco. For gaming. If you need the 5800H for CPU intense work, that's another story.

A Laptop without a DCI-P3 color rating and only 300nits is a bad idea so is having no Thunderbolt 4 ports also bad.
