Seems like a good option if you really need to keep something cool for long periods like camping, but I wasn't really impressed with the temperature variance even after they left it on overnight.

I have a re-branded version of this exact one (ClikTech.) I tested it and mine only moves around 3 degrees or so as long as the battery is strong. As voltage drops, the variance is higher. It is very nice unit.
How long can the 52qt run on a portable battery once it's fully cooled from the car ride? I already have a 250Wh/70000mah battery to plug it into, and understand these consume very little power to maintain temperature.

Depends on a lot of variables, such as if you just cooled it, or had it run as freezer at home first. How long was the "car ride", and how much stuff do you have in it, and do you have it on eco or max. How hot is is the external temp. Etc. etc.

So my thinking is if I plug it in to our house loaded with food the night before leaving, then it'll already be chilled for our freezer. Not frozen, just cold for milk and cheese and things. Will I likely be able to leave it on eco mode to keep it chill while we camp? And about how long will it be able to go on a battery like that?
The compressor in this one is dicey at best, your only insurance is Costco's return policy. Personally, I would look at ICECO fridges when they are on sale - those have Danfoss compressors that are used by big brands like ARB, Dometic, etc. but cost a fraction and they come with 5 year warranty.

Should be able to go overnight but you would want a solar panel to recharge that pack if you expect to keep things going for more than a day. People can look at Hobotechs review for this similar fridge: https://www.youtube.com/watch?v=s-cx__GCqsk Seems to be the same fridge, same LG compressor, just includes a 173wh battery pack and solar panel accessories (this one has no such option) but the power usage measurements should be close or the same.

Edit: It's a legit compressor fridge.
Thank you
