Be warned. The fat cap on this is easily 3-4 lbs, which, imo, is too much. They need to trim it more. Get the strip cut when on sale, has very little fat cap.
You're not supposed to roast this would you and should you? Wouldn't the slow roasting process defeat the purpose of having fatty af wagyu in the first place? I'd imagine it'll make more sense to slice them thin and do a quick grill

That is what I going to do, slice them into 16 pieces so roughly 0.75 oz each piece, vacuum and freeze them. Reserve for major festivals (few in coming months) and events.

You couldn't be more wrong. It is crossbred with American cows many times. It is nothing like real A5 japanese wagyu. Go to your grocery store, they most likely will have American Wagyu. Now look at the fat marble on that piece of meat and compare it to the picture above (or on Costco website). Tell me if it looks similar or not.

Cross breed Black angus cow and Wagyu cow, the more you know.. I actually like the American version, not overly fatty.

Even a cursory search about Wagyu/Kobe differences would show you that you're wrong. American Wagyu can be crossbred with any number of beef variants. That's irrespective of the grade.
Look at the D'Artagnan wagyu on costco.com. That looks like a bit above Choice. It's wagyu, technically, and maybe it'll taste better than your normal steak, but maybe not.
That said, I remember trying to hunt down lower grade Kobe/Wagyu in Asia (USDA prime and below), just because I was wondering if there was a flavor difference at the low end. I couldn't find any, which I thought was kind of strange.
Anyway, in the US the Wagyu brand is so diluted as to be meaningless, which is sad.

USDA PRIME ribeye has been $26 per lb at my Costco since mid this year.
However, I don't really like the amount fat Riley has let alone A5.

That is what I going to do, slice them into 16 pieces so roughly 0.75 oz each piece, vacuum and freeze them. Reserve for major festivals (few in coming months) and events.
