Check out AFTNews Fire TV benchmarks. I'd expect the 2021 Max version to be close to the top.

In terms of actual experience, will those specs make any difference?
Its a bit faster and smoother. The older one is still fine though.

Pretty much yes. 4k vs HD. Other than that, New vs Used is the other major difference between the products.
I have the 4k square dongle and the 2018 4K and I'm probably going to buy the Max when it drops to $35 again. Fire devices have always had more lag than Apple TV, Roku etc but the fact that you can sideload apps easily and run a VPN means I always have one plugged into the TV. The Max is the first one I have used that could actually compete with Apple TV for responsiveness.
