So in this example, you're literally paying $200 more for the Touch Bar. Even if you don't use the thermal pad mod, the GPU/CPU are the same so the performance delta is negligible unless you're doing extreme sustained workloads. If that's you're use case, probably should be looking at a M1 Pro/Max model, instead.
Touch Bar is worth paying extra to avoid having. In this event your saving 200. That's what I call a win win.
My personal thoughts is the fan is just one more moving part that can break. If 8 GB is enough for you then you're probably not going to need that fan at all. Adding in thermal pads means less empty space. It will lower the max temp but raise the minimum.

Pro has 1 more GPU has touch Bar more Battery life, the MacBook Air (M1) maxes out at 365.8 nits of brightness, while the M1 MacBook Pro (13-inch: 434.8 nits) got even brighter. Got my Macbook pro 13 from BackMarket 16gig ram and 512gig for $1100 Including TAX.... with 7 more months warranty from Apple.. :-)

i think 256 is way too small especially considering how much more space upgrades have needed over the past few releases. 512 or bust!
You get the exact same performance. The "fan" on the Pro doesn't even work properly making it useless.
