That's not cheap at all lol so many other nice all inclusive resorts there for a lot cheaper prices lol that's how much it should be for two people

You can get cheap place and food if you know and willing to stay in regular area. I speak a little Spanish and usually stay in central/downtown Cancun through AirBnb for around $21 per night for 2 bedrooms. My friend and I had lunch for two at those Taco Gringos with beer for a total of $5.
Poly don't exactly answer your question but just providing my experience/expectation of Cancun. These days, inflation probably makes it a bit more expensive than what I report above.
