Not necessarily. Ziplock bags work fine using the 'water displacement method.' Vacuum bags are more convenient for freezing and going straight to the sous vide bath though.

You'd want quality bags, preferably thicker freezer bags. Walmart brand works decently too

I know the deal is over, but... just to add some info. You probably want a vacuum sealer if you want to cook anything for like... 12+ hours. I don't know if it's 100% necessary, but I felt a lot more comfortable the longer I went that I was using a sealed bag.

Did you try contacting Monoprice for a warranty replacement? My 800W unit is still running, coming up on 5y later, after being used ~3x a week.
