If it was me, I would just because I like having an i7. But performance wise, there isn't a huge leap difference. What I do notice is that the core i7 has better 64 core performance
Would the lack on on-board graphics of this KF chip matter at all if using a graphics card?
I'm a video editor and I run Davinci Resolve all day. I have a 1080ti card that I can use with this chip.
Is there any advantage to me getting the chip with or without integrated graphics since I'm running the 1080ti?

if you plan to always have a GPU alongside it then the only advantage is that if you GPU dies you can still use the pc until you get a new gpu. some folks just have an old cheap backup gpu for those cases.
If you are using a GPU the onboard iGPU is not used at all and isn't going to provide you anything extra.

Outside of troubleshooting hardware issues or potentially gaining some idle power efficiency by possibly allowing the 1080ti to run in a low power state? Not really.
I will say my former desktop 8600K CPU is serving rather well as a server - good low-power setup around 30W 'idle' running some pretty decent loads with its integrated graphics.
I think the modern 12th/13th gen are consuming substantially more at both idle and maxed - before they thermal throttle themselves. My 5900X setup doesn't seem quite as power hungry, but still more than that 8600K + 970 setup.
